If you eat technically smart, there wont be any spikes. Even people with BG spikes over 200 can have a modest PPBG to 140 just by eating fibrous vegetables with vinegar as a starter, before they eat protein and fat and after that carbs.
In Japan they are trying to implement this on a broad basis. I eat since man years like this. it works.
Even after 2500 calories in one meal with rice or potatoes my PPBG wont rise over 120 peak and after 60 minutes it is down to 95.
Diabetics must of course eat smart, but at least for healthy people you cant generalize that.
